Day One of the 21DSD and AIP
Day one is over and it went really well. It was fun to experiment in the kitchen and I never felt hungry!
Breakfast was a cauliflower, carrot and green apple bake with cinnamon and coconut oil.
Snack was cucumber and lox…my first mistake in this challenge as I realized it contained sugar! Starving from not having protein with breakfast, I just ate it!
Lunch was Sautéed zucchini ribbons with left over chicken, spinach, onion and garlic. It was amazing!
Dinner was a huge spinach salad with cucumber, chives, 2 huge baked chicken thighs and a lemon thyme vinaigrette.
Throughout the day, I also ate/tasted a salmon zucchini fritter and 1/2 a chicken sausage patty that I made

I didn’t really work out a recipe. I just added it all in an oven safe dish and baked it. I will work on some exact measurements, but you can’t go wrong
