Day 5 AIP and 21DSD
Day 5 was another low day, either because I am coming off sugar or this sinus infection. I woke up bummed, because I had the typical sores in my mouth from too much citrus intake; my tea is so bland now! I will survive
For breakfast, I sautéed the rest of that head of kale, onion and garlic, and I tossed in a chicken breast…honestly I ate it begging for mercy! Breakfast has been the hardest meal for me to get use too. One should eat breakfast food for breakfast…this is just wrong! I can’t be the only one who has a hard time getting past this…I do love sautéed kale for breakfast, but with eggs!
For lunch, I came up with an odd concoction. I was planning on making a dip with left over cauliflower. I pureed it with artichokes, garlic and spinach…I then started thinking this was not going to fill me, so I threw in the last left over chicken breast and turned it into Chicken Salad. I put it on top of 4 large romaine lettuce leaves and it was really good!
After lunch, I started a pot of bone broth. I bought a whole chicken and threw it in a pot with onion, garlic, celery and carrots. I was badly craving some comforting & healing soup! When dinner time rolled around, I pulled all the meat off the chicken and made the kids sandwiches on GF bread. For me, I placed some sliced Swiss chard and chicken meat in a bowl. I pulled some of the carrots out of the pot and covered it all in hot broth. I then left the rest of the broth to cook over night (the longer the better if you want it to gel). I let it sit for a moment to soften the chard. Dinner was AMAZING; exactly what I needed with this sinus infection. It warmed my toes
