Day 3 AIP and 21DSD

Day 3 went pretty well. My oldest had an early morning specialist apt, and we over-slept! So, as much as I say that I hate “Dinner for Breakfast,” I was very happy we had left overs in the fridge. I ate the left overs, the kids dared to ask for eggs and eat them right in front of me! :)

I can’t seem to find any photos of my lunch on day 3; however, we came home right at lunch time from our out of town Dr’s apt. I was starved and happy to find left over chicken breakfast patties in the fridge. I sautéed some kale, onion and garlic. I chopped up the 1.5 patties and tossed them in the pan. It was delicious!

I did some chores around the house, and I picked up the younger 2 kids from school. I was feeling a little drained by 4pm. I have been fighting a persistant virus since just after Christmas. I decided to eat my 1 green apple in the form of a green smoothie. I chopped the green apple, added ginger, spinach, cucumber, parsley the juice of one lemon and some ice. I drank this while I prepped dinner.

For dinner, I noticed that the package of shrimp I had set to defrost in the fridge for dinner the night before was still there. Turns out my hubby didn’t notice it and quick defrosted a different bag himself. So that meant shrimp 2 nights in a row.

I switch it and sautéed some carrot and zucchini ribbons with garlic. I tossed in the shrimp and then some spring onions. I have an obsession with vegetable ribbons! Working on a little *how-to* post for you.

 I went to bed early, still trying to fight off this bug I have.
