21DSD and AIPaleo Elimination Challenge Day 2

 

Yesterday went pretty smoothly. I was ready with pre-made (the day before) chicken breakfast patties and Zucchini Salmon Fritters for lunch. I must be losing some water weight because all I do is pee!!

 

breakfast2 Breakfast was the Apple, Carrot and Cauliflower bake again, (this time I used the whole apple it was much better!) as well as the Chicken Breakfast Patties. Truth be told, they don’t taste much like breakfast sausage; it really was like eating a burger for breakfast. I need to tweak the recipe

 

 

 

lunch2Lunch was really, really  yummy! Zucchini Salmon Fritters with a spinach salad topped with lemon, oil and thyme dressing. I want to make these again and share with you; I need to increase the amount of zucchini, and lessen the amount of salt.

 

I knew I would be late for dinner, so I ate the last zucchini salmon fritter at 3pm.

My amazing supportive hubby made dinner for the family while I was out. I came home to this at 9pm. I was starved! It was amazing! Shrimp, butternut squash, Brussels’s sprouts, onion and garlic.

  1. How do you make fritters without using eggs? Just curious..

    • Very gently. I had 2 fall apart on me. Hot pan, cold oil helps keep things from sticking.

      If I remember it was just salmon and zucchini, when I tried again increasing the zucchini, they didn’t hold together as well. I should make them again!
