Simple Chocolate Pudding | Vegan

 

The next experiment in my quest for Agar agar knowledge was “Simple Chocolate Pudding.” Actually it didn’t end up being that simple! Sometimes I make something up and the first try is pretty good; it just needs minor tweaking. For some reason I had several straight-up fails with this pudding, my daughter complained it was bitter and lumpy everytime. Though I actually like the dark chocolate taste, I wanted it to be something for the kids (and my husband who also loves sweets).

I tried using coconut sugar, maple syrup, apple sauce and dates. The final product received rave reviews from my critics; a rich, thick and creamy chocolate pudding; the perfect addition to their school lunch.

Once again I used 125ml jars for setting the pudding. I also found these cute Valentines Day Circle Labels, printed them out and glued them to the snap lids.

This recipe is Dairy Free/Vegan, Gluten Free, Nut Free, Soy Free, and Refined Sugar Free.

Ingredients
  • 1 can of Coconut Milk
  • ⅓ cup dairy free milk (almond milk, Hemp milk etc.)
  • ¼ cup Maple Syrup
  • 3 Majooled Dates + boiling water for soaking
  • ¼ tsp ground vanilla bean
  • 2tbsp dairy free cocoa
  • 2tsp Agar agar FLAKES

Instructions
  1. Pit the 3 dates and place them in a mug or bowl. Cover with boiling water and allow it to soften for a few minutes. Place in blender or magic bullet and blend until mostly smooth. Use a little date water if needed (I imagine a Vitamix would not need the help!). Add the ⅓ cup of dairy free milk and continue to blend smooth and place in a medium sauce pan.
  2. Combine all ingredients in the sauce pan. Use a fine strainer for the cocoa to prevent lumps.
  3. Heat on medium/high heat until bubbly, set the timer for 1 minute. Remove from heat.
  4. Pour the hot mixture through a fine strainer again to remove any lumps before pouring into the 125ml jars. (I had issues with the pudding being lumpy if I didn’t strain it)
  5. Place in the fridge to set.
  6. Remove Pudding *Skin* before eating…or sending to school!
  7. Makes 6-125ml jars.
