White Bean Pizza
We had pizza night last week and made yummy white bean personal pizzas. This was a first for us and it turned out amazing. A nice way to get some extra fibre and protein on our pizzas…and it was sooo flavourful, much like using pesto on pizza instead of tomato sauce, but without the fat from oil (although pesto is usually good fat)
The boys and I used the Glutino ready made pizza crusts and Tyler and Ainnsley used whole grain pitas
We topped them with onion, pablano peppers, kalamata olives, cherry tomatoes, diaya cheese, and even snuck on some turkey pepperoni (eek processed! I guess it is my *bacon,* that hard to give up *meat*)
Grady and I used the left over spread on crackers for lunch the next day

- 1-15oz can of white beans
- 2 large cloves of garlic
- ⅓ cup of fresh chopped basil
- 1 tbsp fresh oregano
- The juice of ½ a lemon
- Sea salt and pepper to taste
- store bought or homemade crust
- desired toppings
- Place all ingredients in a food processor and blend until smooth.
- To make Pizza:
- Preheat oven to 400F
- Top pizza crust first with bean spread and then add any toppings you choose. Bake in the oven for about 10 minutes. I also then put it on broil for a moment, to get things nice and crisp on top.
