Cantaloupe Cucumber Pops

 
 
I made the kids some delicious popsicles last week; Cantaloupe & Cucumber. A few weeks ago I made myself a drink from the LCBO’s Food and Drink Magazine. It was a slushy made from cantaloupe and cucumber and of course some melon rum. It was delicious, and it occurred to me that the kids would love this combo in a Popsicle.

Cantaloupe Cucumber Popsicles

½ a cantaloupe melon pureed
1 large cucumber pureed
3 tsp maple syrup
Juice of ½ a lime

Mix 1 tsp of maple syrup into the cantaloupe puree and pour the mixture into the Popsicle moulds until ½ full. Freeze (about an hour)

Mix 2 tsp of maple syrup and lime juice with the cucumber and pour on top of the already frozen cantaloupe.

Place in freezer until frozen and enjoy.

This filled 8 of my moulds. I separated the mixtures just for the layered look. You could also just blend this all together…tastes great this way also.
